Aim

To expose participants to a basic understanding of food preparation and production.

 

Intended for

Individuals working in industry and wish to acquire a recognised qualification in basic food preparation and production.

  • Food Preparation Methods
  • Cost Control Operations
  • Storage and control of materials
  • Equipment and kitchen Organisation
  • Basic elements of nutrition
  • Cooking methods including boiling, poaching, stewing, steaming, braising, deep frying, shallow frying, baking, roasting, grilling, microwave cooking
  • Preparation and presentation of food
  • Commodities
  • Preparing and cooking food 

 

Requirements

  • Food Handler’s Licence B 
  • Good knowledge of English Language.

 

Duration

Fifteen (15) sessions (5 hours per session)

Commencement date is March 1st, with lessons being held nearly every Thurday. 

Assessment will be held on June 28th. 

Times of lectures – 1700hrs to 2200hrs.

 

Assessment Method

Coursework and examination.
