Alain Ducasse Desserts One-Day Masterclass





The Institute of Tourism Studies will be hosting a one-day masterclass on 'ALAIN DUCASSE DESSERTS', held by a Chef Instructor from Ecole Ducasse - a school of Alain Ducasse.


8:30am - 5pm (1hr break in between)


Masterclass Dates

19th February or 20th February
The session date in which the applicant will be assigned to will be determined by ITS.



€450 early bird till the 26th January, after which price will be €550.

The Menu

Three dishes will be prepared during the masterclass, which are the following:

•    Pear, spices and milk chocolate 40%
•    Peanut, mango & passion fruit
•    Dark chocolate 70% & caramel

Depending on the participants' performance, an additional two menu items will be prepared, which will be the following:

•    Lemon & Kombu seaweed
•    Exotic soft caramel

Chef Instructor

Alumni of Ducasse Education and holder of a CAP in Pastry and in chocolate, Jeremy Delteil pursued his training with Bruno Montcoudiol (MOF and World champion of pastry) then worked in Paris for Claire Damon - Des gâteaux et Du Pain and Jean-Thomas Schneider - Café Pouchkine. In 2012, he joined ENSP where he became Chef Instructor and Educational Consultant. In addition, Jeremy regularly produces recipes for magazines such as Thuriès Magazine or So good Magazine.

Places are reserved on first come first served basis and application will be confrimed following payment. Payment is to be done online, through the online booking system.
